Harvest Ingredients: 1 Red Cabbage, 2 Apples, 1 Kale

All Ingredients: 2 Quarts Shredded red cabbage (1 head), 1 Small Onion* (half moon slices), 1 to 2 Tbsp favorite fruit preserves, 2 Medium Apples** (grated),  ¼ Cup Apple cider vinegar (or balsamic or wine vinegar), 1 tsp  Sea salt , ½ tsp Black pepper, 1 tsp Fresh minced ginger (optional), 2 Cup Shredded kale (optional)


1. Toss everything together in a large bowl.  Allow to sit at room temp for 2 hours, stirring a few times to start the maceration.  

2. Serve as a salad, or sauté for a great crunchy hot vegetable dish.

**Grate apples from top to bottom.  It works better and faster that way.
