Easy // 35 mins // Yields About 3 1/2 Quarts  

Another thing we learned from our Harvest Heroes survey results was that our first Italian Veg Stew is a big hit.  Here’s another easy & adaptable version.  Make it your own using whatever veggies you choose.  I used mostly cabbage.

Deep Skillet or Wok

Harvest Ingredients
1 Onion, pie slice
5 Quarts Favorite Harvest Vegetables
(4 Quarts Cabbage, 2 Cups Each Favorite Veg; Red Peppers, Corn, Yellow Squash, Asparagus)
1 Lemon, juice & zest
(Optional) 1 Tangerine, juice
2-3 Tomatoes, diced
1 Lemon, juice
1 Tangerine, juice

Other Ingredients
1/3 Cup EVOO
4 Cloves Garlic, minced
1/2 Tsp Black Pepper
6 Oz Tomato Paste
6 Oz Dry Vermouth or Water
3/4 Cup Olives, torn
(Optional) Fresh Herbs, Bay, Thyme, Rosemary
3 Hungry Harvest Broth Cubes or Bouillon
1 Quart Water
1 Tsp Salt
1 1/2 Tbs Italian Herbs
1-2 Cloves Garlic, minced
1 Pinch Each, Salt, Pepper
(Optional) Fresh Herbs (Basil), Chili Flakes, etc.

Step 1: Prep out the vegetables in to pleasant shapes.  Saute the onion, garlic & black pepper in oil over high heat until the garlic just begins to color, about 3 mins.  Add the tomato paste.  Fill the can with vermouth or water.  Fry the tomato paste with the onions for another minute.  Add the olives & rosemary and fry another minute. 

Step 2: Add the vegetables, broth cubes or bouillon, salt, vermouth & water.  Cover and bring to a full boil over high heat.  Remove cover and cook for about 10 mins.  If using asparagus & corn, add those in the next step & cook for only 5 or 6 mins. 

Step 3: Add the lemon zest & Italian herbs and cook for 10 mins longer.  When the vegetables are as tender as you’d like, add in the lemon & tangerine juices.  Serve family style with Simple Fresh Tomato Salsa on the side. 

Fun Fact: A delish Mediterranean variation is to substitute a 2 oz can of anchovies in EVOO for the salt in this recipe.  Add them in with the olives.  You’ll find you don’t taste the fish, but the umami factor is wildly increased.  This makes for a great meatless meal served with beans & rice or along side your favorite grilled fare.
