Easy // 15 mins prep + 10 mins grill // 2 Quarts

The tasty flavors of honey & tequila roasted fruit celebrate the summer heat.  Roast these fruits on the grill in just a few mins & for that smoky flavor.  Get a perforated grill rack for easy grilling.  Make sure to include several citrus fruits.


  • 4 Quarts Favorite Harvest Fruit, large chunks
  • (I used pineapple, apricots, black plums, pears, blood orange, lime, grapefruit)
  • 1/2 Tsp Salt
  • 2/3 Cup Favorite Tequila or Lemonade for kids version
  • 1/3 Cup Honey
  • 1/4 Cup Favorite Jam (I used organic lingonberry from IKEA for its tart flavor & bright red color)
  • (Opt) 1-2 Tbs Butter
  • Optional Additions
  • Favorite Sorbets & Ice Creams
  • Cookies
  • Fresh Berries

Prep out the fruit into large chunks.  For the pears & stone fruit, I cut them into quarters.  Quarter the citrus, remove any seeds.  Marinate the fruit in the honey, salt & tequila for as long as possible, or even better overnight and up to 48 hours in the fridge. 

Strain the fruity tequila mix into a skillet.  Add in the jam & simmer to reduce by half until thick and bubbly.  Stir in the optional butter.  Set aside while you grill the fruit.

Roast in a hot 450 oven for about 30 mins.  Or better yet grill them up on the BBQ in about 5-10 mins.  Let cool on a sheet pan.  Squeeze the roasted citrus juice into the sauce.  Roasted citrus are sooooo juicy & flavorful. 

Serve grandly in margarita glasses w/ lemon & raspberry sorbets, cookies & sauce on the top & along side.  Add any remaining fruit to chilled red & white wine for perhaps the most delish Mexican sangria you’ve ever had!
