Easy // 20 mins // 6 to 8 servings

When Harvest fruits are abundant cook some up in this simple summer preparation.  No need to heat the oven, this crowd pleasure comes together in minutes in a skillet on the stove top.   Apples, pears, peaches, plums.  Oh my!

  • 1/4 Tsp Salt
  • 1/3 Cup Brown Sugar
  • 1/4 Cup Coconut Oil or Butter
  • 1 Tbs Honey, Molasses or Date Molasses
  • 2 Cups Favorite Granola
  • 6 Favorite Harvest Fruits (I used pears, nectarines & plums)
  • 1/3 Cup Favorite Fruit Juice (I used black mulberry juice)
  • Harvest Fruit Sauce Garnish
  • 2-3 Harvest Frozen Fruit Puree Cubes
  • 2-3 Tbs Favorite Jam (I used raspberry)

Melt the sugar, salt, molasses & oil over medium heat.  I used half coconut oil & half butter for added silky flavor.  Stir in the granola, toss to incorporate, then set aside.

Add the fruit juice to a skillet and top w/ favorite fruit halves.  Spoon in the granola.  If some spills into the skillet so much the better. 

Cover the skillet & set over med high heat for 6 to 8 mins.  Just warm thru.  Some of the softer fruits may cook more than others.  The texture variations are sumptuous!  HarvestHack: Make a wee extra saucy sauce by warming a few tablespoons of favorite jam w/ a couple of those fruity frozen Harvest Fruit Cubes y’all have in the freezer.

Most everyone has all the ingredients for this on hand.  If you don’t have organic coconut oil yet, get some.  It’s a lovely flavor complement & another healthy fat.  When fruits are a little over ripe, cook them.  They taste so good, are full of nutrition.  And everything goes well w/ ice cream!
