Easy // 20 mins // As You Wish

These BBQ onions are cooked on a medium grill, so it’s nice to be outside in the cool of the evening.  I put some into my Mack & Cheese Pasta Salad for double duty.  There's a bonus grill roasted skillet corn recipe included too.  Do the BBQ Yam recipe at the same time & create three dishes all at once.

  • Onions
  • BBQ Sauce
  • Tomatoes
  • Salt & Pepper
  • EVOO
  • Simple Grill Roasted Skillet Corn
  • 2 Tbs Butter
  • 1 Tbs Marsala
  • Salt & Pepper
  • 2 Cloves Garlic or 2 Tsp Roasted Garlic Paste

Set the BBQ to a medium indirect heat, sprinkle onion slices w/ salt & pepper and roast until tender, about 10 mins, flip once.  If you cut the slices on an angle they hold together better.  Use a vegetable grill screen for greater ease. 

Top each slice w/ your favorite BBQ sauce & a tomato wedge if desired.  Return to the grill & smoke covered for about 5 mins.  Drizzle w/ evoo & serve.

It’s nice to have a cast iron skillet designated for the grill.  Make the roasted corn at the same time as the onions by combining all the ingredients and putting the skillet over indirect heat.  Finish w/ a flash over the hot coals if you’d like a char.

You can make up a bunch of these and chop them up, adding some more BBQ sauce.  They make a create summertime condiment for everything else coming off the grill.
