Harvest Hero Bridget Lynn Tolbert shared her version of Amish Refrigerator Pickles and they were a big hit.  So we’ve re-imagined them this week using pears, apples, onion & citrus.

  • 1 Onion, diced
  • 1 Apple, diced
  • 1 Pear, diced
  • 2 Cups Fresh Citrus Juice
  • 1 1/2 Tsp Pickling Spice
  • 1 Tsp Salt
  • Apple Cider Vinegar

Optional Additions:

  • Bay leaves
  • Rosemary
  • Mint
  • Thyme
  • Curry leaves
  • Garlic cloves
  • Ginger slices

In a small saucepan combine the citrus juice, pickling spice and salt.  I used the Citrus Sea Salt we made this week.

Bring that mix to a boil while you dice the onion, apple & pear.  Pour the hot mixture over the pickles and stir.  Load into clean glass jars.  And allow to cool to room temperature.  Top off w/ cider vinegar & cover.  Shake the jars.  Let sit at room temp for 24 hours to cure, then refrigerate.

Harvest Hack: Buy Apple Cider Vinegar that says “With the Living Mother of Vinegar” - it contains one of the oldest known probiotics.

The juice is flavor gold.  Use it on salads of all sorts, vegetable, chicken, etc.  It’s a crunchy salad and a dressing in a jar!
