When veggies and fruits are plentiful make some creamy blender dressings & dips.  Work w/ what you have, experiment & taste as you create.  I’ve created 3 ideas with items from recent Harvest boxes.  The first uses our Pear & Citrus Flash Pickle as its flavor base


Coconut Fruit Pickle Dressing

  • 1/3 Cup Coconut Flakes
  • 1 Can Coconut Milk,
  • 2/3 Cup Macadamias
  • 3/4 Cup Harvest Pear & Citrus Flash Pickle w/ Juice

    Golden Dressing
  • 3/4 Cup Yam, cooked
  • 3/4 Cup Carrots, cooked
  • 1/2 Cup Yogurt
  • 2 Oranges, juice & zest
  • Pinch Curry Powder
  • 1/4 Cup Vinegar
  • 1/2 Cup Water to rinse jar


Creamy Avocado Dressing

  • 1 Avocado
  • 1 Grapefruit
  • 1 Apple
  • 2 Tbs Pepitas
  • 2 Harvest Salad Cubes
  • 1/4 Cup Vinegar
  • 1/2 Water to rinse jar

Coconut Fruit Pickle Dressing:  Bring everything but the pickles to a simmer for 10 mins.  Cool, add pickles & blend.  Rinse out blender jar w/ a little water if too thick.

Golden Dressing:  This is a good way to use up leftover roasted yam & cooked carrots.  I add a generous pinch of curry powder for flavor & to deepen the golden color.  Blend well, use the water to rinse out the jar & adjust the texture.

Creamy Avocado Dressing: A great way to use up avocados that all ripen at the same time.  Once you add the harvest cubes & vinegar, you gain a few extra days from your avocado freshness. 

Creamy doesn’t mean dairy or mayo.  Nuts, nut butters, avocados & roasted yams or boiled veggies create that unctuous texture we all love.  Use them to dress salads & as dips for veggies, fruits, fried foods & BBQ.
