Harvest Hero Laura Jauregui posted an enticing veggie laden yam taco photo in the Facebook Harvet Recipe Club.  It inspired the easy side dishes & the savory Santa Fe Yam & Bean Bowl recipe we feature this week.  This is one of the most beautiful & easy buffets to layout for friends & family.

  • Roasted Yams
  • Summer Squash & Salsa
  • Easy Pickled Onions
  • Martooni Peppers
  • Lettuce
  • Tomatoes
  • Limes
  • Avocado
  • Favorite Beans or Chile
  • Olives
  • Santa Fe Trail Mix

This can be a cool summer room temperature dish, or serve the beans, yams & salsa squash warm over the cold vegetables.  Create a meal bowl for dinner & more for to go lunches all at the same time.  There is so much flavor in all the components, just a squeeze of citrus on the lettuce is enough.  Add any favorite Harvest pickles. 

I used both the booze pickled chilies & the easiest onion pickle.  Garnish w/ your favorite Santa Fe Trail Mix for tang, chili & crunch.

Leftovers can be rolled into enchiladas, quesadillas or simply served w/ warm soft tortillas as a fast and easy taco.  Cook up a good half of your harvest early in the week, and spoon out flavor for days to come.
