Easy // 10 mins prep // 2 quarts

When peppers are plentiful in the late summer, preserve them in voddy or gin w/ a float of frenet or other amaro.  You’ll taste the summer all winter long w/ these tasty Martoonis 

  • 1 Quart Hot Chilis or Sweet Peppers or a Mix
  • 1 Jar Favorite Olives (350 gram // 12.3 ounce)
  • Vodka or gin to cover
  • (Opt) Amaro or Frenet

Divide the olives and their juice among two quart sized jars.  Divide the peppers among the two jars.  Cover w/ gin or vodka (or do one jar of each).  Float a tablespoon or 2 of amaro on top.  Cover and let sit in a cool dark place for a week or so. 

Your martoonis will sing of summer.  Garnish your drinks w/ citrus, peppers & olives.  Use the booze pickled peppers & olives in your cooking too.  Add to pasta dishes & use as a garnish for your BBQ main dishes.  These are fricken-licking good!

Gin is making a come back these days.  There are so many flavors.  Traditional gin had a strong juniper berry taste.  Not so anymore.  Talk to your local experts and taste the new herbs & spices that perfume the wide variety of blends available now. 

Amaro, widely known in Italy, is just coming into popularity here in the US.  Check them out and give one or two a try.  If you’re familiar w/ vermouth & Campari you already have an idea of the bitter sweet balance of most amari.  In face the word Amaro in Italian means ‘bitter’.
