Harvest Mac & Cheese #1

Easy // 25 mins // Serves 4 to 6  

We’re excited to incorporate Hungry Harvest recipe survey results in our creations.  Turns out Mac & Cheese with Harvest vegetables is quite desired.  Here’s our first one - it’s very easy.  Done in the time it takes to cook the pasta.

Harvest Ingredients
1 Onion, fine dice
2-4 Cups Favorite Harvest Vegetables
(1 Cup Each Celery, Red Pepper, Green Beans)
2-3 Tomatoes, diced
1 lemon, juice
1 Tangerine, juice

Other Ingredients
1 Pound Favorite Pasta
2 Tbs EVOO
2 Cloves Garlic, sliced
1/2 Tsp Each Salt & Pepper
1/2 Cup Sherry, Broth, Brewed Tea or Water
1 Quart Favorite Prepared Soup, (butternut squash soup)
1 Cup Heavy Cream
8 Oz Shredded Cheese blend (Mexican blend)
(Opt) 1 Tbs Corn, Tapioca or Potato Starch
(Opt) Fresh or Dried Herbs, Chili Flakes, etc. 
(Opt) 1 Tbs Dijon Mustard
1-2 Cloves Garlic, minced
1 Pinch Each, Salt, Pepper

Step 1: Set a pot of pasta water on to boil while you prep the vegetables.  Saute the onion in the oil with salt & pepper over high heat until golden brown, about 3 mins.  Add in the sliced garlic and toss for a minute, just to bloom the fragrance, then add the sherry.  Cook until the sherry is reduced, about 2 mins.  Combine the diced tomatoes with lemon & tangerine juice, minced garlic & salt & pepper to taste. 

Step 2: Add in the soup, cream & your favorite Harvest vegetables to the sauted onion mix and simmer over med high heat until the veggies are cooked to your liking, 8 to 12 mins.  Cook the pasta.  I add the spent lemon & tangerine rinds to the water and a generous bit of sea salt.  They say that the pasta water should taste like the sea. 

Step 3: When the vegetables are tender, add the optional starch to the cheese (I do it right in the bag) and shake to combine.  Add the cheese to the sauce reduce heat to medium low and stir to melt. Add any optional flavorings like mustard, herbs, chili, spices.  Combine the drained pasta with the sauce & serve with the tomato salsa along side as a garnish. 

Fun Fact: If you want to get fancy, top mac & cheese with bread crumbs, dots of butter & more cheese.  Put it under the broiler for 3 to 5 mins.  If you have any left over, try a mac & cheese option for breakfast!  I served this with Maple & Salt Caramelized Beets a top apricot halves with fresh blueberries.
