Greens: 2 Days
Roots: 1 Week
If your beets have greens, cut ‘em off leaving about 1-2” connected to the root. Store them in separate breathable bags in the drawer of the refrigerator.
Don’t cut the tail! Leave the beet’s tail intact until you’re ready to cook and you'll avoid drying the root out.
The leaves are as good as the root. Sauté beet greens with lemon, garlic and olive oil for a simple, delicious, no-waste dish.
