Eggplants don’t love low temps - storing ‘em in the fridge can cause off flavors, browning of flesh and pitting in the pulp.

For longest shelf life, keep eggplants away from other fruits and veggies, especially bananas, tomatoes and melons. Eggplants are very sensitive to ethylene gas and will turn quickly.

More mature eggplants can have a bitter flavor, but this does not mean they’ve gone bad. Hit ‘em with a little salt to help counteract the bitterness.
